Best Coffee I have ever tasted!!!

Siphon bar at Lynn Canton Cafe'
I wanted to try their quickly becoming famous individually made brewed coffee made with siphons. So I went to the Lynn Canyon Cafe' located at 3690 Park Road in North Vancouver BC Canada
What is the siphon bar?

Each coffee is brewed using two stacked glass globes resting on top of a heater. The technique involves creating a deep whirlpool with a wooden paddle in no more than four turns without touching the glass.

Basically, vapors and variations in temperatures force the coffee up and down. The principle behind the siphon bar share similarities with the stovetop espresso maker except that the siphon bar requires human assistance several times in the process as you will when you watch the whole process



As our coffee maker Raymond told us, you can learn the basics on how to operate the siphon bar quickly. But mastering the different settings is a long learning process. Only through the hands of a master that the siphon bar produces the most memorable coffee.
Tasting a siphon coffee

A cup of siphon coffee is very delicate, with no after taste, and you get none of the residues typical of French pot coffee. The taste is much smoother than regular coffee. You can taste the subtlety of the coffee beans.

For that reason, the siphon coffee is never made with blend. You want to be able to taste the specificities of single-origin beans. As I understand, you cannot taste that with an espresso because the espresso is brewed too quickly. To taste the different flavor levels, the coffee needs to be brewed slowly. And slowly it is since making one siphon coffee pot of 2 cups takes 5 minutes.

Lynn Canyon Caf serves only certified organic coffee beans that they grind just before the make each cup. I tasted one of the 49th Parell brands( an award winning local roaster, a dry-processed Ethiopian coffee with two distinct flavor layers fruity on top, with a beautiful thick rustic body. I enjoyed it! I sipped it without and with milk to see if we could still taste the subtlety of the coffee. I did.

I am telling you, I drank the best coffee of my life last Saturday. My husband wanted to go back 2 hours later.

My family and I just recently returned from extended a trip to Italy. I have got used to eating well and walking everywhere. Although I live on the North Shore it has been sometime since I have walked the nature paths in Lynn Canyon.
Today we decided to cross the free suspension bridge and hike along the wonderful paths along the water falls. It was a spectacular morning with the sun shinning through the trees.
We all worked up quite and appetite with all the fresh air and exercise .I called out to my kids asking if they were ready for lunch. A fellow hiker suggested we try the caf at Lynn Canyon. My wife remembered the mediocre menu and terrible service from our last visit several years ago. Were we in for a surprise!

As soon as we entered the Caf we noticed very different atmosphere. There was a beautiful background music playing that in no way was overbearing or too loud. Our conversation was in no way jeopardised by high volume beat music which is the norm for most places these days.

The menu was as it should be for a venue such as Lynn Canyon. My wife remembers the former menu as a feeble attempt at fine dinning .The new menu is burgers hot dogs and fish and chips. This is not your ordinary fast food joint. The burgers are made with local organic meat (Blue Goose Cattle Company) ,the same meat you can by at West Vancouvers Whole Foods. The buns are fresh baked whole wheat. The tomatoes garnish actually tastes like a fresh picked Italian tomato. The light sauce is srumches .It is mayo based but with something added that was delightful, Even fries were something to rave about. I was informed the French fries are hand cut daily from real farmers potatoes. The fish and chips were the best I have had anywhere. The fish tasted moist and is fried in a light batter (probably a beer batter). My wife said her wild salmon burger was as good as or better than any salmon she has had at any fine dinning room.
My kids loved the all beef honey hot dogs. They ate everything even the bun! We finished off with gelato for desert. The gelato was fresh, delicious and tasted as good as anything we have had in Italy. My kids having lived in Italy are now gelato connoisseurs. The service from our initial greeting by the owner to the table service was friendly polite and very efficient. All In all except for the washrooms Lynn Canyon is a place The district of North Shore should be proud.
